Homemade Almond Milk

Ingredients

Multiply the recipe to prep extras for the week.
1 cup raw almonds
3-4 cups less water will make it thicker
2 2 dates, pitted (optional)
1 vanilla pod (optional)
Equipment
High-speed food processor
Hand-held blender or Blender

Directions

Soak almonds in a bowl covered with filtered water for 12-14 hrs.

Rinse and drain almonds and then place into a blender along with the filtered water.
Mark as complete

Blend for 3-5 mins until smooth and creamy.
Mark as complete

Place a nut milk bag or thin tea towel over a large bowl and slowly pull the almond milk mixture into the bag. Gently squeeze the bottom of the bag to release the milk.

If using a tea towel, carefully gather the corners and lift up. Then squeeze until all of the liquid is extracted.

Transfer milk to a jar or covered bottle and refrigerate.

Shake well before drinking as it tends to separate.

Notes

STORING LEFTOVERS: Serve immediately or store in the fridge for four days or freeze for up to four months.
Allergies: For a nut-free version: Swap almonds for shredded coconut, sunflower or hemp seeds.
Easy ingredient swaps: Swap almonds for macadamia or cashew nuts for an extra creamy dairy alternative.
Additional sweeteners: Add any of the following ingredients before blending to sweeten further: 2 medjool dates, stevia, monk fruit, manuka honey.
Additional flavours: Add any of the following ingredients to enhance the flavour: cinnamon, vanilla pod, cacao or carob powder.
