Notes

STORING LEFTOVERS: Store in an airtight container in the fridge for up to 14 days or freeze for up to 4 months.
Prep tips: To save time, you can also press the mixture into a clean baking tray or roll it out with a rolling pin to approximately 2 cm thickness and cut it into squares.
Easy ingredient swaps: Swap seeds for seeds or nuts of choice (chia, sesame, almonds, cashews, walnuts, pecans). However, if you add nuts, this recipe is not longer school-friendly. Swap seeds for oats.
Additional boosters: Use chia seeds as part of the mixed seeds.
Baby-friendly version: Leave out coconut sugar and serve cut up into finger food-sized pieces.
For fussy eaters: Dip into melted dark chocolate and serve on a popsicle stick. Encourage them to help roll the mixture up into balls and (maybe) dip them into melted chocolate.
